Keeping the British troops supplied with fresh beer out in the British East Indies proved to be a problem during the 19th Century. The lengthy journey by sailing ship caused the beers to spoil and a special brew therefore had to be supplied - India Pale Ale. This was brewed to a high alcoholic strength to keep bacteria at bay during the voyage. Upon arrival the beer was watered down to normal pub strength for the troops.
Of course the officers had access to the non-diluted version! However you have a choice. Recreate India Pale Ale, brewed to the Troops Tipple at approximately 1041 strength or the Higher Ranks Reserve version in its higher strength form.

At the end of the 19th century a beer was brewed especially for the dockyard workers of the bustling Port of London. Docklands Porter was named after these strong men, who unloaded the cargoes of sailing ships and schooners berthed at the many wharves along the Thames. Porter had a uniquely rich and satisfying flavour which quenched the thirst of dockers after long shifts loading and unloading vessels from around the world.

INDIA PALE ALE is a true classic. in the time of the British Raj very strong pale ales were sent to India by sea. These ales were very high in both alcohol and hops to preserve them on their long sea journey. Generally they would be diluted to a more 'quaffable' alcohol level before drinking in India. This is our interpretation of how a true IPA would have tasted.

This bottom tap keg holds nearly 26 Litres and has a 4inch neck opening, which allows for easy cleaning. The screw cap carries a pressure release and a CO2 introduction valve to enable excess gas from over priming to be realeased automatically and additional gas can be introduced to keep up internal pressure. This is the ideal barrel for the connoisseur, who is prepared to leave his beer up to mature, condition and clear to perfection.
The bottom tap barrel is supplied with the S30 valve.
This keg has the same high specifications as the "King Keg Bottom Tap" except that the dispense tap is placed near to the shoulder of the keg and has the latstock easy-serve float system attached to it. The advantage of a float take off system is that as the beer clears from the top downwards, it can be drawn off from just below the surface and therefore drunk much sooner than from the low tap dispense system of the standard King Keg.

This premium quality pressure barrel holds 6 Gallons (27 litres) and comes with a large 4inch lid (which makes it easier to clean) complete with a S30 valve. The valve is designed to allow extra gas (pressure) to be inserted into the barrel and also allows release of excess pressure that might build up during secondary fermentation.
It is designed to be use with an S30 gas cylinder. If you don’t use the S30 gas bottles (only available in certain parts of the country) then you will need an 8g Injector complete with black bulb holder and a pack of 10 of the 8g gas bulbs.
The top tap (this incorporates a float) system means that as the beer starts to clear you can draw this off first – which is particularly useful if you are impatient! The drip tray is also a nice extra.
The extra capacity (6 gallons size with only a 5 gallon beer kit) is designed to store the extra pressure that builds up during fermentation so you will need to add less additional gas. Top tap is also useful if you are storing the barrel in an area where you don’t have an overhang or if it’s on the floor as the glass goes under the tap easily.

Keeping the British troops supplied with fresh beer out in the British East Indies proved to be a problem during the 19th Century. The lengthy journey by sailing ship caused the beers to spoil and a special brew therefore had to be supplied - India Pale Ale. This was brewed to a high alcoholic strength to keep bacteria at bay during the voyage. Upon arrival the beer was watered down to normal pub strength for the troops.
Of course the officers had access to the non-diluted version! However you have a choice. Recreate India Pale Ale, brewed to the Troops Tipple at approximately 1041 strength or the Higher Ranks Reserve version in its higher strength form.

This 4.5 litre press has a solid metal base plate and legs with a tough, baked-on polyester coating, an oak-slatted cage bound by coated steel hoops, beech wood pressure blocks and a cast iron pressure mechanism. A threaded spindle is secured through the baseplate and passes up through the middle of the cage. The cage is filled with crushed fruit, two semi-circular beech discs are positioned on top of the pomace and an assembly of blocks placed over the discs; a large iron nut is then screwed down on top of the blocks forcing the wooden piston into the cage, pressing the fruit as it moves down. The juice escapes through the cage staves and flows into the juice channel of the baseplate and out through a lip into a bucket or jug.

The pilsners of southern Germany are generally softer and less bitter than their northern counterparts. This fine example is perfectly balanced with a delicate bitterness provided by Hallertauer Hersbrucker hops. Although it is acceptable to ferment this beer at room temperature, a cleaner taste will result from the genuine bottom fermenting yeast if the temperature can be held between 12°C and 16°C. Best bottled but can be served from a keg if preferred.

Wheat beers are deservedly popular all over the world but until now have been difficult to brew at home. For the malt extract we have used the classic ratio of 55% wheat and 45% barley and the Hallertauer Hersbrucker hops give just a delicate hint of bitterness. Although we have used a bottom fermenting yeast, the characteristic estery flavours are much in evidence when fermenting at warmer temperatures (20°C - 25°C). It is important to produce consistently bright wort in order to reduce the level of protein and polyphenols. If high levels of these substances are present they will lead to draught beers that are difficult to fine or bottled beers with a greatly reduced shelf life. Whilst protein can to some extent be removed with auxiliary finings, it can present other problems which can be improved considerably by its removal in the copper.

If high levels of these substances are present they will lead to draught beers that are difficult to fine or bottled beers with a greatly reduced shelf life.
